Джек и Йорма раньше вместе учились в одной вашингтонской музыкальной школе и оба увлекались блюзом, слушая пластинки старшего брата Джека. Будучи еще подростками, они создали местную команду "Triumphs". Потом на некоторое время их пути разошлись. Встретились друзья лишь в составе "Jefferson airplane", к которому Кэсэди присоединился в качестве басиста.
Спустя некоторое время, не уходя из этой группы, они начали выступать дуэтом. "Hot tuna" (сначала "Hot shit") успевала давать концерты в промежутках между выступлениями "Airplane".
В 1970 году к дуэту присоединился Вилл Скарлет (гармоника), кроме того, ребятам периодически помогали Мартин Бэйлин и Спенсер Драйден. В этом же году вышел дебютный альбом "Hot tuna", записанный в Новом Орлеане. На диске звучал традиционный рэгтайм-блюз. На следующий год на свет появилась пластинка "First Pull Up, Then Pull Down", сделанная в более роковом звучании. К моменту выхода их второго альбома они уже были квинтетом, в который еще вошли легендарный скрипач Папа Джон Крич и Сэмми Пьяцца (ударные). Перед выходом третьего диска, "Burgers", еще более жестко звучавшего, команду покинул Скарлет. К 1973 году, когда появился "Phosphorescent rat", Кэсэди и Кауконен официально расстались с "Jefferson airplane". Папа Джон Крич наоборот решил остаться только в "Аэроплане".
После выпуска "America's Choice" в 1975 году Пьяцца покинул состав "Hot tuna". Его место за ударной установкой занял Боб Стилер.
Группа издала еще несколько пластинок (диск 1978 года записывался с клавишником Ником Баком), и в 1979 году было объявлено об ее официальном роспуске. Кауконен занялся сольной работой, а потом присоединился к "Vital Parts". Кэсэди организовал свою группу "новой волны" - "SVT". Однако в конце 80-х друзья встретились вновь и время от времени начали давать концерты под вывеской "Hot tuna". В 1990 году к ним присоединился гитарист и автор композиций Майкл Фалзарано. Также ряды "Hot tuna" пополнились ударником Харвеем Соргеном. С их участием группа записала новый студийный альбом, "Pair a Dice Found", за последние десять лет. За этим диском последовали концертные релизы.
В 1992-м в группе появился клавишник Пит Сирс (экс-"Jefferson starship"). Конец 90-х "Hot tuna" провели не очень активно, изредка устраивая гастроли и время от времени выпуская концертные и старые записи.
